There are a lot of members here that can help you.  Rocketman, beerbreath81, salsalady and others that do it as a hobby or professionally on here.  There are a couple of pinned threads on thp on how to ferment that may be of use to you also.  I am no expert so that is my advice for what it is worth.

Looks good !!! What kind of sausage is it ???  Looks like summer sausage or a bologna.  I dabble at that hobby also.  Unless you have your own recipe their are some good commercial seasoning kits out there.  With you being from IA. I know they sell Hi Mountain products here.  I use it and tweak...

Sorry to read about your daughter and your plants.  I don't have those seeds yet so I can't help you there and the ones I do have you probably already have.  I hope everything is okay with your daughter and your other friends can help you out on your seed quest.  Glad you got your jerky though...

Judy is a pretty cool lady.  I'm using up my dried peppers, some from her,  to make (trying) hot sauces so I can order from her later in the season.  All I know from what I've read and posted...is she treats her customers right

Looks like good food !!!!  BBQ is a good thing worldwide.  Never ate Argentinian cooking before I'll have to see if there is a local touch around where I live.   Very interesting thread.
