:welcome: from lower SW Minnesota. You may as well accept that some members of your family will never eat major heat. I make salsa and hotsauce in 3 heats, mild, medium and the good stuff. It's just something you have to do.

Juliana, I clean the jalapenos out and freeze them. I stuff them while they are frozen. I cook them frozen, they turn out great. It works because it's hard to get fresh jalapenos during the winter. But then mine are stuffed, wrapped in bacon and baked, I don't want poppers coated in batter...
