    Maybe I should have started a thread about favorite spicy sandwich spreads and let it run out to 100 pages.... Which could still happen. While I'm not really a mustard fan, there are some hot German mustard spreads I can tolerate, but they are more horseradish based.

    I already have sriracha, and home made creamy southwest sauce that was a copycat of subways southwest chipolte sauce, but I used arbol powder instead and twice as much. Any other ideas for sauces that would go well on cold sandwiches for lunches?

    Yup, still using the Unifun 45 watt (36 actually draw). I wasn't too sure it would be enough, but apparently 255 0.2w LEDs are quite a bit more efficient than 5 or 10w LEDs. I'll probably still upgrade to a 300 watt (~130 actuall) eventually, particularly when they get really big and bushy...

    We've actually had pretty good success germinating seeds from frozen pods, some of which were in the deep freeze for a couple years. Although I would recommend using the paper towel method.

    Not too sure about the alloy for aging, but was wondering if using a vacuum top on the jar to suck the air out and get the brine to penetrate everything faster would speed up the fermenting process. After the brine is thoroughly absorbed, you can pop the vacuum top of and put on an airlock.
