    I am happy to report that after sending my RECON 1 ( tanto tip... yeah!) knife to Cold Steel they repaired it and sent it back to me at NO CHARGE. That, my fiends, is GREAT customer service. VIVA COLD STEEL! It's once again at my side where it belongs.

    Co-signed with the above. Grind it more (maybe a blender is better) and cook it and leave the solids in there. Yeah, xanthan gum will help prevent separation. The lager gourmet grocery stores should carry it. Keep it in the fridge. If plenty of vinegar it should last a year or more... if kept...

    Nah, it's sort of a cheat; a dash of vinegar mimics the sourdough flavor but it's not a true Levain. That requires keeping and feeding a "mother" which has to be done everyday. My larger point is that the longer the sponge and dough ferments the better the dough will taste. To me, good pizza...

    I"ve been using "00" flour instead of high gluten and I like the results! Actually 2/3 "00" and 1/3 semolina makes a nice crispy crust. One trick I do since I dont have a stone is to slide the pizza off the pan about halfway through and finish it on the oven rack. Crisps up real nice!
