It depends on the variety. My Yellows were dark green and Jonahs light green.

Yellow7 and Fatalii would be my top 2, but very closely followed by a fat, juicy, red ripe Serrano. The Jonah would be number 1 if it wasn't so damned hot. The best flavour of them all but must be used sparingly. :)

I probably threw out 3 times as much, winter is cruel. At least we don't get snow and the plants have at least some chance of surviving. How many plants all up do you have Micca? 39 varieties is a lot... well unless your name's JR. :)
