I would be most interested in knowing what the locals eat, cook with, and enjoy the most.     I am growing several varieties this year that I didn't know existed the previous year.       We live in exciting times, and I appreciate the effort you are putting forth with this.     Thanks CAP.

I imagine that you would be able to keep it for quite a while if you are dehydrating it like you dehydrate peppers for preservation.  Maybe they would have to be made thinner to allow for better moisture reduction, but I'm not familiar with dehydrating candied peppers so I would take that with a...

many folks use the 5 gallon water jugs with threaded tops with an air lock.   Not for pepper mash though.   I imagine it would work the same
