Salsalady is continuously trying to cast a negative light over the hobby sauce trade.

If you are not licensed, you should not be selling sauces. End of story.
Don't worry, I won't bother your thread any more.

NeoGuy I don't want to sell you any sauces so thank you. Salsalady if someone is selling something it is not your responsibility or place to clog up their add with your crap. Start a separate thread and voice your opinions their... Your post are just a way to bully "hobby sauce makers" from...
Fermented sauces can be absolutely delicious and have a flavor like none other. They also don't have to have a "bite" like salsalady says they have. One can simply select certain peppers and add certain ingredients that will not make a bitter sauce. I am so happy with the flavors of my fermented...
I used 2.5% salt in my ferments and it came out perfectly. One ferment I even added additional salt at the bottling stage. The headspace needed is dependent on how agressive the ferment is. I went with about the same headspace as you and was close to boiling over. I also noticed that adding...
I have two different flavors for sale currently with a third (Yellow and fruity) getting ready to be bottled next week. First is my original red special brew sauce. This sauce is very strong in flavor and very hot. Bill Moore rated the heat an 8 out of ten and the flavor a 7 because he says the...
I got a sauce from sadisticpeppers that has a smoky flavor somewhat like a chipotle sauce although very sweet but has quite a kick. Other than that the only thing I can recommend is adding some super hot powder to your favorite chipotle sauce. My fav chipotle sauce so far is el yucateco I...
Mmm. I don't know about the rosemary but other than that it sounds great. Think I will have a go at homemade saurkraut after the rest of my hotsauce ferments are done.
I have just started my first sourdough starter yesterday lol! I added a teaspoon of honey to it because I cant leave anything alone haha. Can't wait to try my first homeade sourdough bread out. Will be cooking in my old trusy wagner ware cast iron pan :) It's funny how I just came across this...
Mash looks like it might end up boiling over if you don't keep a good eye on it. I just tap the bottom of the jars with my fist to settle the mash down. I am currently experimenting with the ziplock bag on top of the mash but the cabbage leaves is probably a better idea.
So I didn't order much and not sure I am going to grow all the ones I ordered next season but I ordered brown scorpion, sugar rush, shepherds ramhorn (sweet) from Jim Duffy and I also ordered from Judy at pepperlover.com white peach, moa sotch bonnet and Devils horns. Definitely going to try the...
I would like to grow some more yellow varities (flavor) along with some rocotos and something really hot so probably going to try out Judys devil peppers. Trying to not grow as many varities as I did this year lol
