2019 Xmas/New Years Food Prep.

Thought it might be nice to see what people are doing for Xmas food.
 
I.m starting off with making Potted Shrimp.
Garlic
Rosemary
Chipotle
Barley Miso.
Organic Butter.
Dried Leeks.
 
Slow cook to marinate and then but in jars.

interesting!  never heard of potted shrimp.  Looks like something I'd love. 
 
We're on our own this Christmas, probably nothing special as we did the big ol' prime rib for thanksgiving.  I did see the local market had fresh Dungies....(that's dungeness crab for those not of the PNW~~~ and the best dang crab there is!!!).  I plan to snag a couple and just eat 'em with butter.
 
And some Chinese Pork...the red stuff with mustard and sesame seeds.....just LOVE that stuff.
 
i`ve never heard of potted shrimp but if it has butter and shrimp it HAS to be good. SL, the crab and chinese pork are my favorite foods also. i like the pork when it`s got burnt ends, to me its more tasty when well done. 
 
nothing set in stone yet but we have xmas eve and xmas day so probably wings and shrimp xmas eve and spiral cut glazed ham xmas day. new years eve is also finger foods, cheeses and crackers, dips, possibly wings and/or shrimp and whatever else the kids want.  new year`s day maybe a nice piece of fish to start the new year "right". 
 
For the first time in 45 years.
 
All five kids will be together.
 
With their spouses.
 
Except for mine.
 
We are no longer.
 
None of our own kids will be there.
 
We'll be at dear sweet ma's house with Ken.
 
And ma's friend Annie.
 
But due to work schedule my younger sister has to work on Christmas day.
 
 
So our Christmas dinner will be on the 26th.
 
Christmas eve.
 
Tamales, quac, salsa, chips, queso.
 
Big bowls of lime wedges and pickled xalapas.
 
 
 
Christmas day ma wants to make lasagna, crudite, salad and what not.
 
Most of us will be there.
 
The day after when everyone is there...
 
I'm doing 5 pounds of Texas Gulf shrimp.
 
Some boiled, some garlic sauteed.
 
Heaps of cocktail sauce.
 
Fresh lemon squeezin's and pleazin's from ma's trees.
 
Our family loves shrimp!
 
Queso con chorizo.
 
And a pickle olive cheese tray.
 
Ma is roasting a turkey and a ham.
 
Baked sweet potato's.
 
Mashed potato's with gravy.
 
Stuffing.
 
Roasted broccoli and cauliflower. 
 
Huge green salad.
 
Roasted corn with salsa.
 
My younger sister is bringing apple, pumpkin, and pecan pie.
 
Probably green bean casserole too.
 
 
We'll add to all that I am sure.
 
 
So what y'all got goin' on?

Memere's Beans are very simple, she gets white beans, not sure if navy,  she looks through them all for pebbles or stones.  cooks them slow and low til tender but not quite mushy, with a healthy dose of salt pork and onion mixed in and probably a few other ingredients i've never noticed.  They go great with everything! she does them Thanksgiving too
 
Our big meal will be on the 29th.  The kids and grandkids will come down to the farm.  This year the wife says it will be a FIESTA.  Enchiladas, Tamales, Taco Bar, Flautas de Pollo, Barbacoa, Pork Verde and Queso.  I'll grill some marinated carne from the local carniceria (I haven't decided on what yet).  I'm sure there will be lots of assorted pickled things, pepper jellies and muchas cervezas.
