Depends - if you make it Jewish-style it will be better than Irish style (which is generally tougher - don't know if it's something in the brine or cooking time or what, suspect Jews cook our CB longer making it more tender) - also I believe cutting it has a lot to do with it - something about the grain. I'm no expert but my grandma and mother sure are!


Will you be serving it with potatoes, cabbage or what?
 
Probably just mashed potatoes and broccoli, unless I get motivated to go to the stoh. (Unlikely.)
I don't think style is the issue. I've had both extremely tender and extremely tough Irish style, and ditto for Jewish style. I think it depends more upon the individual cook, and whether or not they cook it the correct amount of time at the right temp.
