I can't even eat normal French fries anymore after spoiling myself on sweet potato fries. Probably one of my favorite sides/snacks and hella easy to make. Simply wash the potato, cut both ends off and then cut into fries that are roughly the same thickness. I like mine about 1/4" thick and about twice as wide, seem to cook best. Preheat the oven to 425F, line a cookie sheet with foil, put the fries on the pan and toss with olive oil to coat. Then season well. My favorite is kosher salt, fresh ground pepper, smoked paprika, garlic powder, and hot chile powder. I used Dorset naga powder for these and they're righteous. Cook for about 20 minutes or so flipping halfway through. Don't be scared to let then get some color on them, sweet potatoes can take a good bit of black before they stop tasting carmelized and start tasting burnt. You'll probably have to burn two or three to get the rest cooked right.
If you can find Japanese sweet potatoes (purple skin, white flesh) they crisp up a bit better than orange ones, but orange ones still rule.
