condiment BBQ Sauce >> Smoked added or No Smoke added ?

OK anyone have any thought's on BBQ sauce i see many people use it on smoked food witch i think is a horrible mistake on Smoked foods. Why wreck a good smoked butt with some crappy store bought sauce. 
And what is your go to sauce?
 
I like a good savory sauce with bits of garlic and black pepper etc. This one is tits to marinate chicken with.

Grant, you will dig! It's a thin sauce because of the beer but packed with savory flavor and bits, and not sweet. Marinate chicken overnight and you get real beer can chicken taste, more than the method. And it's made with Maine ingredients. ;)
 
Prob the best marinade/thin sauce I've had, for chicken. I could see this performing well for kebabs, wings, quarters. But def a chicken sauce imo. Wait. London broil, it would be killer for.
 
It goes fast because it's best as marinade, and brushing on, so get a couple if you do.

Ray Lampe I'm not much of a sauce guy so I don't care for most of the sweet ones. The only bottle that's usually at our house is Gates original from KC. Sandi like BBQ Bob's so that's usually around too and a bottle of Sweet Baby Ray's for guests.

Most BBQ guys don't use sauce in the cooking, so really I don't think they will have much to say on it Jay. What are looking for? A sauce for what? 
 
PS. Can you ask Aaron Franklin what sauce to use on brisket? :rofl: Please let us know how that goes.
 
I use BBQ sauce on any brisket that I don't get vacuum sealed within the 1st 24 hrs after the cook.
 
If you flash chill it within 24 hrs, it keeps well in vac pouches, fridge or freezer ...
 
If you let it get past that, with oxygen in the container, the smoke flavor upon reheating is usually not the full selection of flavors, and emphasizes bad one's, while minimizing good one's ...
 
Like Maillard's (or the remnants behind the reactions), the "smoke" is a combination of hundreds if not thousands of flavors, and they each have their own timeline or half-life or whatever ...
 
I use BBQ sauce on day two leftover's, and thereafter ...
