I'm just going with the Eat, Drink, and be Merry theme
 
I had planned on drinking and eating a lot this weekend anyway so it worked out great   :beer:
 
I only submitted my Chile con carne y Huevos y Tamales to bump the thread. :D  (I thought second entry was hangover drink only also)
 
My Huevos Divorciados is my Entry 
 
 
Now i'm off to see if i have anything to make a drink with or maybe just take a couple more shots

Guatemalan Insanity Pepper
 
Dip your hangover in here 

 
Bloody Mary 
  • 1 cup vodka
  • 32 oz tomato juice
  • 2 tablespoons hot horseradish
  • 1 teaspoon worcestershire
  • juice of 1/2 lemon
  • 1 2 oz Demitri's mix of your choice
  • celery and slice of lemon to garnish
Fill a 1/2 gallon pitcher with ice and mix all ingredients together. Put ice in a glass, pour mix and serve.

Pepperoncini Beef Sandwich with Au Jus for dipping
 
 
  • 3 1/2 - 4 1/2 pound chuck roast
  • 3 tablespoons butter
  • 2 tablespoons oil
  • 2 cups beef broth - (I like making mine from "better than bouillon" or if I have homemade stock from beef rib bones)
  • 1 cup water
  • 2 tablespoons fresh rosemary
  • 16 oz jar pepperoncini
  • rolls
  • ​a good sharp provolone 
  • kosher salt and fresh ground pepper
Melt the butter and oil in a dutch oven or large pot over high heat, thoroughly salt and pepper the roast. Place the roast in the dutch oven and sear on both sides until nicely seared. This takes about 2 to 3 minutes per side. 
 
​Add the beef broth, rosemary, water and pepperoncini with juice. Cover and reduce to simmer, roughly 5 hours. 
 
Remove roast from pot and shred with two forks, similar to pulled pork.
 
Slice your rolls and add provolone cheese and place in convection oven at 350 and heat until cheese starts to melt
 
Add the amount of beef and pepperoncini you wish and top with any topping you desire, I chose tabasco coarse ground mustard and it paired well
 
Take a cup of the au jus for dipping, sit back and prepare yourself for the next desire to drink while totally forgetting about last night

The mustard pickled pepper combo on beef reminiscent of burgers with pickles/mustard, or hot dogs... at first the mustard threw me then I was like, ohhh yeah that's good right tharrrr.
