LunchBox's Deconstructed Chile Relleno Casserole

Sorry this is gonna hafta be quick and dirty...(got Scovie's attention)

Cover bottom of casserole pan with corn tortillas. Roast and peel a shit load of poblanos, and layer them on the tortillas. Sprinkle uncooked rice over the chiles. Pan-sear, then add diced chicken, with garlic, jalapenos, onion, roasted cumin, dark chile powder, sea salt, lime juice, and SCOVIE POWDER. Over that cover with ranchera de LunchBox...which is garlic sautee'd in a pan, then add poblanos, numex green chiles, jalapenos, chile de arbol, and gas-bomb the house. Then add onion for a few minutes, then a couple cans of rotel, salt, paprika, and lime juice. Simmer that down and mash by hand for lumpy, or blend for lazy. Add another layer of roasted poblanos, then cover that with pepper jack cheese. Cover that with another layer of corn tortillas, cover, bake at 405 for about an hour. Uncover, layer cheddar all over the top, and put oven on high broil until cheese just starts to brown. Serve with crumbled queso blanco, and pico de gallo (made with onion, cilantro, fresh cherry tomatoes, and "hot" jalapenos, & chile de arbols from the garden...a little fresh ground garlic salt, and the rest of the lime juice.

Sorry that was a crash-course...otherwise wouldn't have made it. I can elaborate later tonight if need be.
