chile relleno and chili-braised baby back rib pizza
ingredients pic and proof of life:
dough:
00 flour soft wheat from Italy
yeast
water
salt
olive oil
mix--allow to rise, put in a well-seasoned #12 cast iron skillet put a ring of tomato sauce and start cooking at 450°
ribs:
baby back ribs
salt
korean coarse red chili
flour
beer
olive oil
mix 1/4 cup of chili with 1/2 cup of flour, coat ribs, saute, add beer, braise for an hour until fall-off-bone tender
chiles rellenos:
5 anaheims
jack cheese
flour and chile (left over from breading the ribs)
3 eggs
oil for frying
roast, skin, deseed, stuff chiles with cheese, coat with flour, coat with egg, fry until done
pico de gallo:
tomatoes
onion
cilantro
serranos
salt
lime
chop everything finely and mix
assembly:
when about half cooked, place ribs onto pizza
later add the chiles rellenos
top with cheese
out of the oven add pico de gallo
