Vanilla just seems to only make them taste a little boozier to me. I don't ever pick up the essence of vanilla. Just the alcoholic extract taste.

There's so many things that taste like 'vanilla' ... hard to place it ...

lots of breweries use extract ... many of those training-wheels Funky Buddha-like beers have extract flavoring ...
 
it's not seasonal and varies less ...
 
i find that extract has sharp/high notes, though ... not a big fan ...

I believe that. I also haven't had many brews with vanilla. Certainly none that would actually use whole vanilla beans.
