preservation Best way to preserve a home hotsauce?

My grandpa invited a homemade hot-sauce about 25 years ago that we use in our family restaurants in the Los Angles area. Unfortunately, this sauce only has a shelf life of a 3-7 days. It has been out a family goal to sell this hot sauce on a larger scale, hopefully starting off in local markets, or something along those lines, but the shelf life makes it unreasonable..

Their job was to add preservatives to this hot sauce, keeping the flavor as close to the [/SIZE]original[SIZE=12.727272033691406px] as possible, but everything they came up with, altered the flavor and we didn't really get what we were looking for.[/SIZE]
 
[SIZE=12.727272033691406px]I know many of you guys make your own sauces, so I was wondering if there was a secret ingredient that worked as a tasteless preservative or anything. We've been trying to do this for quite some time, so any suggestions would help. Our goal is to achieve around a 6 month shelf life.[/SIZE]

That is cool. I had no idea you could inspect with gamma. What does it offer that xray doesn't when it comes to welds?
Portablilty being main advantage, speed (depending on half life/intensity), easier to use. X-Rays can be turned off gamma rays cannot. They can only be mitigated (time, distance, sheilding).  Feel free to PM to discuss further, I dont want to change subject of thread. Or you can search NDE RT examination I think youtube even has a couple mock up videos to show the basics.
 
We are planning on doing this on a relatively big scale, and hopefully grow from there, so I think that gamma sounds like a good option! We are currently going to start looking at the Sterigenics company and will go further with them, if the research looks good!
 
 
We are going to try cooking it first to see if it will change the flavor, but if that doesn't work out Gamma irradiation will be the next option!
 
I would tell you guys more about the sauce, but we all have to keep it confidential for now :/
 
Either way, I'll keep you guys updated! & thanks again for all the help! I'm definitely moving in the right direction! :]

I wasn't asking for the recipe, just a list of ingredients like what you will have to put on the label when it goes to market.  Just trying to get a general feel for the sauce and more importantly it's consistency.  Hope you didn't think otherwise.

No, I understand. It's just kind of a unique sauce, and well known in my area, and my family doesn't even want people to know that we are doing this until it's finalized and trademarked, but I know you're trustworthy.
 
I'm most likely going to cook it tomorrow to see if the flavor changes! excited to find out and let you guys know!
