condiment Bhut/jalapeño salsa verde

First I have to say I can't take full credit for this recipe, I found it on instructables.com a while back and have used it every summer since. That being said I did adjust it slightly.

Alright time for the good stuff.

Ingredients:
8 good sized jalapeños
As many bhuts as you like
12-13 medium sized ripe green tomatillos
Lots o' lime (2-4 depending on size)
Fresh cilantro (about a bunch)
Garlic salt
Salt

Start by cutting all the peppers in half and removing the seeds and pith. Remove the papery cover fromthe tomatillos.

Put all the peppers and tomatillos in a pot and fill with enough water to float the tomatillos and cover what ya can. Bring the water to a boil and keep boiling for about 15-20 minutes or until the tomatillos are very soft and kind of mushy lol.

Now put about half the peppers and tomatillos in a blender and blend until still sort of chunky. Squeeze the juice from 2-3 fresh limes (key limes are better) into the blender. Now I love garlic, can't have too much, so I used 8 or 9 good sized cloves freshly ground, but use whatever you like. Add the coarsely chopped cilantro and the rest of the peppers and tomatillos and blend again until tr salsa is a nice smooth consistency. Add salt and/or garlic salt to taste.

Leave in the fridge until it's nice and cold and thickened up a bit. If it's still too thin I add a little xanthan gum as a thickener but you ould use an thickener you have on hand.

Enjoy with tortilla chips :)

In mine I only used one Bhut and boiled it with the other peppers and tomatillos and it didn't add much heat at all so I would suggest either adding it fresh or dried in the blender or using more of them. I also added a little Bhut powder at the end to spice it up.

Either way it a nice cool, refreshing, and spicy summer salsa.

Feel free to make suggestions or modifications and share, I'd like to try something different lol
