Bit of British jerky.

Well it's my first post and on an iPod so no photos I'm afraid but tried my hand at a bit of jerky:) the marinade I used was a mix of cider vinegar, apple juice and some form of smoked pepper, a scotch bonnet all chopped small and a heck of alot of chilli powder.
Also some salt though I know realise that I should have used more?
Anyways unfortunately the finished product, which was again dusted with chilli power before drying, was a tad to vinegary. But was wondering about soy sauce next time but was woried that it would end up tasting of soysquce? I wanna goy for a plain beefy one but with just quite a bit of spicy to it? Any help from the seeming jerky gods on here would be much appreciated. :D
 
Dude....don't put vinegar in your jerkey marinade. Use a teriyaki or soy sauce and a dark brown sugar. Then after it marinades for about 15-20 minutes.....let it drip dry and add some pepper powder (I use habanero powder) and toss it in the dehydrator.


I've never tasted anything better.
