smoking Blues, Booze & BBQ

Here 'tis after a little more than 6 hours in the smoker.

The salty sweet comes through nicely from the yoshida's to compliment the mild flavor of the fish without overpowering it but man oh man, the orange and the zest really make it pop in your mouth!

I just realized that while doing drunk cheffing I didna' take any booze pics.

I don't rightly know what temp as I've never measured it with the fish.
 
I just throw it in the Mini-Chief and check it and yank it when its done.
 
I can't imagine the little unit getting much hotter than 220f or so.
 
I wonder how many of you Led Zep freaks have heard this original classic...Fortunately, I was able to see most of these old cats.

SalsaLady has some shinnanigans down south (past Carltoon), but hired me (for HHWiskey) to smoke some butts. 50 some odd people gonna be there? I dunno... I'm not. I'm only smokin, drinkin and blues chillin here today. Had to get up at the crystal meth of dawn. Only meth heads are up this early on a Saturday, on purpose.
 
• 27 lbs of Pork Butts
• 1 bottle French's Yellow Mustard
• 1-1/2 bags of Brown Sugar with Garlic Salt, BP and some special stuff.
For the chef:
• 1 C. Black Coffee (X2)
• 2 0z. Buffalo Trace Bourbon (X2)
