Provolone and some cherry bomb peppers

Oven roasted brussels sprouts and sweet potato fries

Ate my burgers bunless (cutting out some the grains) Topped with balsamic onions and mushrooms, avocado splashed with lemon juice and seasalt, bacon, Served on a bed of lettuce from the garden

Made some Aoli for first time. This going to be a staple

By Far the BEST aoli i've ever had, EVER! used Mayonaise, spicy sushi mayo, JHP smoked thai, lemon juice, garlic, olive oil and some chopped cherry bomb pepper. Everyone was raving over it. Was so damn good, was supposed to be for my sweet potato fries but ended up using it on our burgers as well

Pics turned out halfway decent for being cell phone

I bought some to make sushi rolls, got the sriracha mayo, wasabi paste, nori sheets , fixins ect. Just need a bamboo mat. I was was thinking on doing something with carnitas and cilantro lime rice and avocado.. now that's how I roll ... sushi

He survived!!!

We tried out a new restaurant that opened at a old TGI fridays location. Bull Dog Ale House  Just about everything on the menu looked good.

I got some Parmesan truffle fries, the waffle fries where bomb, some nice sounding wing sauces.

The Jalapeno poppers (the japs still had a ton of snap, I would have preferred a little roasting)

Filling and bacon was good, what ever the dip was tasted fine but I got a side of the mango habanero wing sauce and was dipping them in there. Very sweet sauce little heat

Monday special was build your own burger starting at $1 burger,  toppings other than pickle, onion, tomato and mayo cost extra, I got bacon, mushrooms, jack cheese, sauteed onions and chipotle mayo added. Had a ton of topping choices

I have to say it was one the best burgers i've had in a while. Even better than any i've been making. Def going back again. Might even leave a good yelp review. Normally I reserve that for bad reviews.

Al dente poppers are a good 'thang in a restaurant as that means they are made in house.

Ever 'thang looks hot blue and righteous teh 'boot.

Nice restaurant find senor.

But don't kid yourself.

YOU can make a burger at home better than any joint.

Home ground chuck.

Or ground brisket or short rib.

Smashed.

Best burger ever by miles.

Speaking of Miles...

He's my Irish cousin.

Miles O'Tool.

Love my INO for fast food style but its not even close.

One other 'thang.

Smashed in cast iron is incredible.

Smashed on a flat top is even better.

Believe!

I seen some burger smashers at Marshals today

I almost picked one up thinking of you brother

almost

but I usually grill unless i'm outta gas.

Once you go smashed.

Well.

You know...

But why is smashed better?

IMO its not only the maillard crustinessess vs. the charred crust of grilled.

Cooking on solid iron brings out more for true beefness flavor.

Without the carbon and bitterness.

Then again you might dig on that bitter flavor added to the meat from flame grilling.

I'm cool and the gang with that.

We all like to be liking what we like.

With burgers there is no wrong way.

Okay I lied.

Steamed burgers to me are an abomination.

That's a flat meatball.

Grill or flattop, both are maillard, maillard is some dude's name who explained why certain foods turn brown when you cook 'em, no matter how, not just the flattop! A pretzel has maillard, the crust on bread... all that sheez.

But I hear ya on preferring the flattop sear to the grill, that's your preference! And it does make a good burger.
