Had a rough afternoon, so I took out some De Roo Taco Tuesday and FB's fermented/aged Butch T HS and waffled up some kobe burgers ...

One thing I like about cook-from-frozen SRF patties, I am comfortably cooking them rare ...

Shallot and pimento-smoked Benton's bacon fat = heaven.

Lookey here, I don't trust no store bought burger at rare or medium rare.  Like I said, it has to be something I grind myself, or deer meat for me to gobelow medium on burger.  Please understand, or I will have SL explain all the dangers of eating under-cooked meat.

i agree, but that's SRF beef ... some purveyors can be trusted ...
i'll eat it rare from folks who process beef 'raunts use to make tartare ...

i'll eat the PLF rare, or Niman Ranch ...

i won't eat Publix's sub-M ...
