smoking Capsaholics-BBQ

Last Saturday we from the www.capsaholics.de had ab board-meeting.
Hombre and I did the BBQ
We startet friday night at 11 pm with about 9 kg brisket,they were in the smoker for 14 hours,never higher than 150 F.I had to get out once at night at 3.30 am to check the fire.They were done at 1.00 pm on saturday.Then we startet the ribs....they took us 4 hours (two times)
About twenty chiliheads were satisfied,we had a great and hot party....

I'm in the same boat. Just finished the last of my wings. As much as I love them, that's 5 straight days of suicide wings for dinner. I'm ready for a platter of what Phil's cookin'.

Seriously....nice pix. When I graduate, I'm coming to Germany....so lay out some blankets and stock up on bier and meat.

Thanks Chuk I'm pumped, but the drag is, it feels like we're only weeks away from our first snow. I don't mind BBQing using a gas grill in the winter, but I doubt the smoker would be effective in cold temps. I may not get to use it till March or April.
 
I use mine all winter just have to be more vigilant and add more coals to keep temps stable once its heated it stays pretty hot --- Im in the process of creating a coal basket where I can swap out spent ashes with a fresh basket of new ones that I had pre lit with my charcoal chimney .... Dont use match light in 'er
