chilli conversions

Hi Im very new to sauce making. Im trying to make a jolokia sauce. I have the minced jolokia chillis and am trying to work out how much to use. What do you think would be an average conversion per chilli to minced chilli?

You want to produce a sauce using Bhut Jolokia chiles, and asking how much is needed for it to be as hot a sauce with a more common chile, like the Jalapeño perhaps?

I think he means how much (id est. 1 tbs) of his pickled/preserved Jolokia is equivalent to one whole pepper.

So if that's what you mean; pod size varies greatly, and it's probable your minced Jolokia aren't just 100% pepper. I'd just ad little by little to your base sauce, tasting incrementally, and figure out what kind of heat & flavour you want.
 
Im from kenthurst in sydney. sorry if my first post didnt make much sense. it was very rushed between trying to do 100 other things. Yeah i think i will start with a small amount and work up.

I'd estimate one medium size bhut pod about 4 cm long would mince up to 1 1/2-2 teaspoons.

Raelacea's suggestion is the best way to get the heat level you want. Keep in mind that sauces usually get hotter as they sit compared to how hot they are when you are making the sauce.

I have to agree with many of the posters. I am also new to sauce making, having just completed my first sauce

The 4 Yellow 7's were enough to turn most people off to it. I brought a large batch into work to share and nobody was really able to handle it. That said, these 7's aren't as hot as the bhuts, so if you're looking to share with friends and family, I would incrementally add the pepper to taste. My friend recently ordered some smoked Bhuts online. I watched as he used a coffee grinder to turn them into a fine powder, seeds and all. He ground a total of 3 peppers, and put them in an average salt shaker. I estimate that it was 1 to 1.5 tablespoons tops, or .5 tablespoons per pepper. I don't know if this really helps you or not and it is just an estimation.
