Grilled hogshead snapper, wrapped with lettuce, herbs (cilantro, culantro, peppermints, rao ram, perilla leaf), rice paper, pickled salad. Diced up a Bahama goat pepper for a little heat.

First time trying this fish. It's light and flakey and delicious!

It was really really good. Definitely recommend that hogshead snapper, it's quality fish!

I think so. The fish monger said they catch them by spear. Just did a Google on it. They are hermaphrodite and start off as female and end up as male.

Bad pics but it was good. Chicken in a tomato gravy tonight served with corn, mustard greens topped with Sriracha along with the rice. I added Rotel and we all know you can't guess the hotness, this was nasal clearing hot but so good.

Classic red cooked pork belly. I find this one rather challenging to get the color right. It appears to be off to a good start this time. This one is sort of a blend of Sichuan and Taiwanese versions. A tiny bit of heat is added and some additional spices. Its quite mild actually unless you bite into one of the Super Chiles.

Much better than the last time i tried, Served it Lu Rou Fan (Taiwanese) style over rice but there wasn't much "Lu" to it. No hard boiled egg either but oh well. A little LaoGanMa, dark soy,, rice wine and vinegar for dipping the scallion pancake. I cooked that just for Texas Blues to see.. One of the things i added this time was blood orange peel. I dried it a couple months ago.
