Comfort Food Thread

Searched and found one 7 years ago and instead of activating a necro thread with dead photobucket links I thought might start a new one. Winter here so probably gona do some sweet stuff :D
 
Had a craving for eggs lately. Rye bread/tomato with a slab of Havarti, Golden berry hot sauce and harissa sauce.

80/20 beef, finely diced smoked bacon, finely diced onion, smoky chilli powder, garlic powder, cheese centre, 1 Tbs smoky puttanesca sauce. Browned and cooked in sauce.

Grated tasty cheese.

Baked 20 minutes at 200C/392F. Finished with more smoky chilli powder.

Another tater bake
 
1 box Idahoan scalloped
1 box Idahoan au gratin
Crumbled bacon
Half a white onion finely chopped
1 heaping tsp Aji Amarillo powder......had enough zip surprisingly. I wasnt going for anything spicy really just wanted a hint of spice.
Half and Half instead of the milk
Only about a tbs of butter since its going to have enough fat
Topped with a good handful of Cabots clothbound cheddar
 
Combine and cooked more or less per directions on the box. Bake a little cooler for 425min@30min instead of 450F@25min and let it rest in the hot oven a few more minutes.
 
Still has about 15min to go in the oven.

Got another idea i want to try with the aji amarillo too
 
Rehydrate some of my dried pods to try and remove some of the heat. I still have a few fresh ones i can boil too.
 
Make a paste from the pods
 
Use dried sliced taters or papa seca
 
Can of Cream of chicken soup, cream and some bone broth
 
Leftover rotisserie chicken leg quarter meat.
 
Toss it all into a casserole dish and bake for a "Americanized Aji de Gallina".
 
ATM im having a hard time finding bulk dried sliced taters at a good price. I would have to buy a huge amount to get the price down. Shipping is the killer on the 5lbx4 bag bulk packs. Its pushing $70 total.
 
Lion Head Meatloaf. Just upscaled the Woksforlife meatball recipe and added 3 shallots. Baking at 350F. Internal temp after resting on the counter was 60F before going in the oven.

2 pounds 80/20 ground chuck
1 pound 80/20 ground pork
About 3 golf ball sized shallots minced
1 slice ginger (20g, minced)
3 scallion (minced)
3 large eggs
9 tablespoons plain breadcrumbs
3 tablespoon Shaoxing wine
3 tablespoon light soy sauce
3 tablespoon oyster sauce
1 teaspoon white pepper
1/2 teaspoon five spice powder
3 teaspoons cornstarch
1/4 cup water
3.5 ounces water chestnuts minced
