condiment Crazy Salsa

OK I didn't know what else to call it. But it is based off a recipe I found online and added my goods to it. Sure its not the hottest thing but the burn you do get is very slow and nice. Not to mention the flavor is wonderful.

Ingredients for Best Recipe

*6 large seeded chopped peeled tomatoes
*2 cups seeded chopped green peppers
*3/4 cup chopped onion
*1 1/2 teaspoon salt (I used pickling salt since I was canning)
*2 cloves minced garlic
*1 1/2 cups cider or wine vinegar (might try lime juice sometime)
*2 large Jalapenos (chopped)
*2 Cayenne (chopped)
*2 Black Pearls (for heat)
*3 Sticks of chopped celery
* Pepper (to taste)


Directions for Crazy (but nice) Salsa Recipe

1.Combine all ingredients in a large pot.
2.Bring to a boil, reduce heat and simmer 20 minutes.
3.Pour into hot jars leaving 1/4 teaspoon head space an adjust the caps
4.Process for 30 minutes in boiling water bath.
5.Yields: 8-9 half pints or make fresh and store in refrigerator.


I was very fortunate to have all ingredients home grown except for the celery, Tomatoes, and 1 Green Bell, oh and the Garlic. Those we did have all the items at one time but have used them up. Anyway i was looking to make a salsa that was both good and didnt burn you face clean off.

I am very weird when it comes to vegetables. I cut up everything in pretty small pieces and its nice to have salsa that way anyway because then you don't have a scoop chip with a huge chunk of tomato and nothing else. The heat is slow and is very friendly but does seem like it might have some staying power to it.

I only sampled a very small portion of it and was VERY impressed especially since my cooking doesn't go much past "OK where are the Microwave instructions?". But today I have a pints worth that I will be sharing for the big Viking vs. Packers game. Well hope you all like.

Now that I got a nice recipe perhaps I can in some way improve on it. man I cant imagine how though...lol
 
Actually good point. I did actually add that in, just forgot to add that in the list. I think the Cilantro is the real small green specs you see in the close up pic. But yes I did add some, thanks for pointing that out. :D

It is official, I will be making a new batch on Sunday. I will be making some of it as I have posted above along with some of it using lime juice and I may even try ripe japs just to see how it differs from green ones.

Worry about the flavor not how hot it is. Trust me on that!!! When I judged the Jungle Jims Salsa Contest I tasted the absolute worst tasting salsas ever and some of the Most Fantastic Tasting Salsa as well. Flavor is very important and looking at your recipe it sounds great!!! (good to hear you did add cilantro)

Your consistancy looks spot on as well. You want to make sure it is not too watery and not too chunky. You want the chuncks to fit on a chip and "stick" not run off.
 
Thats exactly what I will be shooting for with this batch. I am going to make sure there is less liquid in the jars and I was told by my friend to cook it a little longer as it would help the flavors "mingle" better. Not sure if I should cook it longer though. I even had some odd idea pop in my head to. Im thinking of trying on taking out the vinegar substitute it for lime juice (not sure how much I should do though) and add some pineapple to it. Not sure if I will do it or if this is a step I shouldn't take but it was an idea.

You can substitute lime juice or lemon juice for vinegar in a recipe but not the reverse..can't sub vinegar for lemon or lime juice. Cilantro in canned salsa is up to personal preference...too much can get bitter. It can always be added at serving time. Pretty salsa pics, looks yummy.
 
Well I made my second batch. I didn't taste much of it but I did double the recipe and I also put them in pint jars. I went to a church auction on Sunday and got a food processor so I was able to put that to work and it worked great and saved me from getting arthritis :lol: I also used my 5 red Joe's long cayenne's and 3 or 4 red Jalapenos to make some hot sauce. I also didnt try that but it looks pretty good.
