Gotcha....using the immersion chiller in my 3 gallon batch was like magic. I think the wort was down to 70ish in about 15 minutes. I forget you guys have warmer tap water. I still have not used the PID controller yet. Maybe soon.
Actually it is very nice having good brewing conditions. Luckily my fermenting room in my basement stays between 60-70 F all year round. Great for doing ales, just got to hook up my Johnson Controls Digital Thermostat Control Unit to my garage fridge and I can start lagering. Brewing in Florida must require either a temp controlled fridge or some other regulator to encase the fermenter in that can set the temp, I would imagine
