Fatalii / peach hot sauce!

This is a sample of the finished product from today's sauce making.
This is specifically for pork, but it has applications for chicken and fish as well.

SEVERAL Fatalii's
several red Caribbean Habs.
several over-ripe peaches
several orange tomatoes,
a HEAD of garlic
one large sweet onion
2 tablespoons of peppercorns
1/4 tsp cumin
2 tsp salt
juice from 5 limes
1/4 cup apple cider vinegar.
Combined all in a pot, mashed it up, and cooked it for a while.
once all was very soft, I ran it through a food mill.
THEN... added 3 small peeled, cored, sliced apples and cooked until soft. Hit the whole molten lot with a stick blender.
Then bottled it up.

At first it is nice and sweet, then WHAM!!!!
It's very addictive! made a roasted chicken tonight. Shredded the thighs, and doused with the sauce.... WOW!!!!

Great recipe! I'm not much into peaches, I think I'll substitute some pineapple. My Fataliis are still coming.
 
the reconstituted peppercorns add a definite "black pepper" note that adds a savory component to counter the sweetness.
