First Attempt @ Hot Sauce/Puree

Here is my first attempt at making hot sauce/puree.

On the left is Scorpion and Bhut Jolakia to the right.
Nothing but peppers and vineger to preserve it. I did strain off all the solids and boiled it down before canning.
4 oz and 8 oz jars.

I put a teaspoon of the Scorpion into about a 1/3 cup of plain salsa. I made it thru 3/4's of it before I had to quit. It took a good 20 minutes to stop burning.:mouthonfire:

I'm sure the Bhut will be worse...............

I have made singles sauces of:

Bhut Jolakia
Scorpion
7 Pot
Fatalli

I gave samples to a friend at work. He finally combined all into one sauce. He replied back that it has great flavor but, intense, continuing burn.

Sounds good, no?:mouthonfire:

OK, the hard frost has hit. Here is today's sauce:

The ingredients:

Vineger
Lime jiuce
Fresh pureed papaya
salt
garlic
50 7 Pot pods
50 Scorpion pods
30 Naga Morich pods
30 Bhut Jolokia pods
and a few spices

I tasted the sauce right before canning, on the tip of my finger, the layers of burn and intesity! I put some on tonight's pizza, maybe a half tsp. total on three pieces of pizza. THAT was enough. Man this is stuff is hot and flavor!:mouthonfire:
Over a quart of this, welcome to the painfest!!!!:hell:

I gave some to 2 co-workers today. They took a slight taste test. They both said it is off the scale heat-wise, short of adding extract( which I do not care for).
They want more......

I found it enjoyable just reading the amount of pods you used!!! Makes my mouth watery...
