First batch of sauce

I just made my first batch of hot sauce.  Don't really know what I'm doing but trying to figure it out.  What I came up with was not bad.  It's funny though because it has the consistency of more like a buffalo sauce.  Maybe I used too much carrot.  I don't really mine though I figure I will just use it for that.  It is not super super painful hot but it is pretty damn hot.  Kind of like a cross between a Buffalo Wild Wings Spicy Garlic and Blazing sauce.  It had my nose running!  The only thing is the vinegar is a bit too apparent.  Maybe I can find a good buffalo wing sauce ​ and use this for a base.  Thanks for all the help you guys give in here.

You'd definitely know if you used too much carrot. It would be real thick.

If the white vinegar is too apparent use a different vinegar. I personally use apple cider in most of my sauces. I have used white whine vinegar, rice wine vinegar and sherry vinegar.

Sounds tasty! Vinegar being prominent, buffalo wings is a good call the sauces are vinegary by nature. :)

Mixed with some butter for a wing sauce i bet you will like it more. A little sugar helps to soften the vinegar bite also. My go to vinegar for less of a bite is Chardonnay vinegar. Its just as acidic or even more but doesn't taste like it to me. I use mostly Korean brown rice vinegar for my sauces.
