seeds germinating in jiffies and greenhouses

ok.. ive got my seeds... now im stuck....
even though i live in a very warm climate where the winters are quite mild im at loggerheads as to whether i should start the germination process now or not!!
i want to use jiffy pellets in a little greenhouse to start them (trinidads, jonahs, 7 pots and naga morich) and i need some clues as to whether i should start now to have them ready for the ground around late august september ...

and....

has anyone got any methods for actually successfully doing this?? its my first time growing from seed and i want to start on the right foot. any help or instructions for this would be great!!

id say go for it, but dont plant all the seeds just in casee.
