The one thing that is goid about the kits is that they are small batches to get your process down. In hindsight I probably should have done 2 kits instead of 4. I will say at this point I am confident in knowing and understanding the basic concepts and steps needed to brew beer. Next step for me will hopefully be to move on from the basic and get more into it.
 
grant you can always introduce more oxygen into a beer and have the yeast revert to aerobic reproduction as long as their is enough stuff for them to eat, they always prefer aerobic reproduction
 
that being said, I would have let that starter just ferment and pitched it today mid fermentation

that's what i did ... i gave it a drop of fermcap-s and opened the stopper to let more air in ...

Just because I am lazy and do not feel like looking through the whole thread....you completely fabricated that brew pot? You are using an electric burner? What size is that pot?

I did all the plumbing work etc, for all the parts that came w/ it ...

It's a 24 qt brew pot ...
 
You can brew 2.5 gallons of whatever size you want, and 3 gallons of DIPA-size beer, and probably 4 gallons of session beer (can then split into a pair of two's) ...

It's a stupid system, though ...

What is stupid? You brew kettle set-up? Looks pretty cool.
