I read they use 100% Columbus hops, and that they use WLP001 at 67F across the board, I believe ...
 
Here's what I came up w/ tonight in Beersmith and submitted to Wheebz for approval/modification/suggestion/direction etc ...
 
Double-Eye, PA
 
WLP001, 750ml starter at 18-24 hrs ...
 
2.5 gallon batch size
Maybe like 148F mash temp? ... not sure on this aspect for this beer?
75-100 min mash (Plato-driven)
75 min boil
 
78% 8 lb briess pale ale malt
9.8% 1 lb gambrinus honey malt
9.8% 1 lb weyermann munich malt
2.4% .25 lb briess caramel 60L
 
whirloc and nutrient
 
.5 oz columbus pellet at 75m
.5 oz columbus pellet at 15m
.5 oz columbus pellet at 10m
.5 oz columbus pellet at 5m
 
ferm at 67F until done, wait a day or two, and then add:
 
2 oz columbus leaf in dry-hopper in keg

I've gone back and re-read a lot of the book I have. It is a lot of gibberish until you have done/seen it. I've only brewed 3 beers now but my general knowledge has greatly improved. That being said though, I still have a ton to learn.
It's fun learning though. Some of it doesn't click until you do it too.

It can be really simple, too.
 
I plan to set you up so it's just a matter of following steps.
 
Then you'll be able to do it once, and then everything else will relate to that experience and make more sense ...
 
Definitely read about and recognized some of the terms from following Ozzy & your threads.   Just need the peppers to stop.  I am getting close to just pulling my tomato plants at this point.

I hear you and some that I have no idea what to do with are staying on the plants.  I have 2 beautiful PDN plants that I just do not harvest because of indecision on what to do with them.  
 
Sadly, I am  my pepper plants bitch at this time. 
 
So, last night I cranked the temp down to crash the Darkness, Everybody and Charliewine batches right in primary ...

Later this afternoon, I'll be trying to work out the kinks in my kegging crap, and filtering those brews into appropriately sized kegs - freeing up the two five gallon kegs for future fermenter needs!

This is the reconfigured version I sent back after he suggested modifications ...

boil for 75 mins
 
87.3% 9 lb briess pale ale malt
  9.7% 1 lb weyermann munich malt
     3% 5 oz briess caramel 60L
 
whirfloc, 5g gypsum, and yeast nutrient
 
 .5 oz columbus pellet at 75m
.25 oz columbus pellet at 15m
.25 oz columbus pellet at 10m
.25 oz columbus pellet at 5m
 
   1 oz columbus leaf in dry-hopper in keg (after initial ferm)

ferm at 67F

at 55% efficiency, it's a target of 1.082 against 72 IBU's and could finish around 1017 at 8.7%

if I get slightly better efficiency out of kettle, at 60%, it's 1.090 against 5 less IBU's and 9.5%
 
Going to be getting a modification to the strainer basket to eliminate the nylon bag, increase efficiency, and eliminate messiness ...
 
The added bonus of being able to sparge is a nice add ...

Lol you should be good for awhile now. You gonna test all your connections this time? If you just take a cheap bottle of bubbles and wipe some of it on each connection bubbles will form where there is a leak.

going to open valves one by one tonight and watch the pressure ...

and yeah, i'll do a little soap verification too ... but it's a mess.
 
yeah ... i've got the valves all open to the connectors for all four gas connections and it's holding pressure at 20 psi right now ...

going to turn it up to 30 next, and check after the next episode, and then if it's good, let it sit overnight to verify ...

tomorrow i'll check and change my keg seals to the new one's, and rack the two big beers into kegs for carbonating ...
