Yep, preaching to the choir. The chilipepper. I knew some of these, but there were even more health benefits than I thought.

As a person who suffers from heart and diabetes problems, I appreciate the information you've provided. It's very interesting and shows that I'm on a good track to better health with my new found hobby and diet changes to include increased daily consumption of hot peppers.

Thanks!

I've been acclimating myself to the capsicum for several weeks now and have greatly increased my tolerance level. I'm using different concentrations of the Naga Morich to gain the tolerance. I did some standard Jalapeno sauce last night and it actually tasted kind of bland.

Tell your wife that the best sweetener she can use for *everything* is the Stevia plant.

I'm using the 1 gram packets now and it's made my sugar level drop nicely.

I've ordered 4 of the Stevia plants. They should get here in a couple more days.

I'll make my own powder then and save a bundle.

Good luck to her.

Stevia has a number of benefits. The packets are an easy way to use it as a sweetener. The liquid is even better IMO, and comes in flavors and is easier to dissolve in everything. I don't even use sugar anymore unless i'm cooking.

In the garden, stevia is a natural insect deterrant and can keep unwanted pests away, such as aphids as i recall. I'm growing about 4 plants in my garden as i type this. The leaves are large and green and have a natural sweetness to them that is quite pleasant and would make a hell of a mojito or mint julip additive. Typically the leaves are harvested at the end of the season, dried, and crushed to be used in making an extract.

It's easy to grow as well. My plants are well over a foot tall in just 2 weeks. Don't bother with seeds, go right for a seedling. Seeds are kinda hard to germinate.

I can't use sugar any more. The stuff makes my readings go off the scale. Surprise of surprises, when I tried Splenda, it did also. I almost fell out of my chair when I took my reading after a few days of Splenda. Holy Crap! Who would think?

The research I've done so far indicates that you can dry the leaves and process them into powder and use it as a sweetener as is.

You can also use a small amount of 100 proof (or better) and soak it for 48 hours, strain out the leaf and let the liquid evaporate to make an extract.

Also a method I've found is to soak the leaf in simmering water for 30 minutes, strain off the leaf and reduce the water to gain an extract.

I'll enjoy playing with it to see which method works the best for me. The four plants I've purchased should be here tomorrow. I'll grow them outside and clone them to make more plants. I have a lot of room for plants.

apparently even novice growers have a hard time growing from seed which is why i suggest going for a seedling. I got mine at Lowes for $2-3 per pot and each pot had 2-3 seedlings.

I've read the same thing. Supposedly, the seeds have a very low germination ratio.

I ordered the plants also. More because I'm impatient then because of the germintion.

The site I ordered from says :

Stevia 4 Plants in 2 1/2inch Pots
Four Stevia plants in 2 1/2" pots. These plants are over 4 inches tall and well branched.

The receipt I got this morning says:

Stevia plants (2) shipped.

I've already emailed them and asked what the story is on this.

I already ordered them and can't change it now. I read the directions though and it sounds like how one would pretty much germinate pepper plants except that you have to put the seeds on top of the soil and use light. Keep them warm and damp with a clear cover and holes. I'll mess around with it and keep you guys updated. I love a good challenge anyways. I think that's the best part.

Please keep me posted about this. I was thinking about ordering some myself...and i'm thinking now that i'm looking at the same site as you.

I'm also type 2 diabetic. We grew stevia last year but something got it and I was kind of disappointed with it. The commercial packets of stevia are ok but have a nasty aftertaste IMO. It may be worth another try but at this point, too many peppers, grandson coming to live with us, etc it's going to have to wait until next year.

The packets do have a funky aftertaste and god forbid they get near moisture, you end up with rocks in a paper wrapper. Have you tried the stevia liquid in the medicine dropper bottles? It's 1000x better than the packets and you use very little. I've been using the same two bottles since last summer. It also comes in cool flavors you can use in coffee or any drink. Whole Foods sells their own brand in powder and liquid and it's tons cheaper.

I've used stevia in a number of recipes where i would have used sugar and had decent success. you need to add a filler sometimes, but it's not too bad. My pancakes with stevia were delicious as was the squash pie that i make (i use cayenne pepper on the squash btw).

Check my photo thread to see how my stevia looked a week or two ago. They get big.

After some more research, I've found that you should only try to germinate the Black seeds. This will give you about an 80% germination ratio. If you try to germinate the tan seeds as well, your ratio will drop to about 20%.

It looks as though the tan seeds just don't germinate.

Good luck man!

Thanks Nat. I'll keep that in mind. Also, how big do these babies get? My wife and I plan on keeping a few of them year round. I guess they can double as a house plant later too.:)

i bought my plants at around 5-6 inches in height about 2-3 weeks ago and they are over a foot tall already. I think they get quite big.
