sorry, not a big pineapple fan..I'm from the Apple State. ;)

Oh you are from NY, eh Quad? :P The home of the best apples of course.

Biscombe, big pineapple fan and want to make my first hot sauce with that as one of the main ingredients. I have the ingredients in my head, I just do not know the correct measurements to do it. Maybe one day.

Heh, nope..NY may have the big apple, but Washinton has the apples... ;)

I think it is time you did a video and try both NY and your beloved Washington State Apples and then you can know the truth. How about you do a blind test and have someone feed you a variety of apples- red delicious, golden delicious, McIntosh, Rome, Honeycrisp, etc and you rate each apple. Might be fun to do as a group test. I love apples, especially McIntosh.

Hey Buddah, I'm going to experiment with this pineapple/chilli combo, I'll measure out and let you know how i get on! I want to store it, so vinegar will have to play a key role! watch this space........................

you will only need say 25% vinegar (too whole recipe) as Pine ia an excellent preserving fruit already (so you don't need to get the strong vinegar taste unless you want that).
