I don't remember where it came from.  I could figure it out with a bit of work though.  Don't know what color they are going to be yet, but they should have a good flavor.
Here they are.  Came out nice and moist.  Probably will lower the temp and cook them longer next time.

And they weren't too salty.  I bet if I soaked them over night they might have been.  Salt is going to be a fine line I am going to have to walk on my smoking projects.

When you say smoking, do you mean cooking with smoke? Or true smoking at low temps?
 
When slow smoking at low temps to preserve I use prague powder #1, it's a cure mixed with salt. I mainly use it when smoking fresh sausage, but it works for fish as well. 1tsp per 5 pounds of meat. So you can have your low salt and not risk any bad stuff.

I smoked this at 200 degrees and think I will do the next set at 175.  I am thinking I am doing a hot smoke and not a cold smoke.  Smoking is all new to me.
 
I used 1/2 cup salt, 1/2 cup BS, quart of water, some onion powder and garlic.  Next time I will do some rub after I brine it.  
 
I am not worried about my sodium level, I am worried about taste.  A little salt makes it taste like crap to me.  
 
Trying to learn this whole process.  Wanting to smoke some sausage soon too.
 
 
 
Just ordered 25 more timbers lol.  If my math is correct, and I think it is.  I will have two beds 24 x 4 5 timbers high, and then I will be making a 16 x 4 bed 4 timbers high for my strawberry bed.  It isn't looking like the tire is going to be big enough to hold my strawberry garden.  It will hold my 7 brown moruga plants though.
 
I agree, salt is something to enhance, not dominate. The cure is for when you don't bring the meat up to a cooked temp.
 
I told my partner at work about the sale, he went and bought 70 timbers. Home Depot should pay you commission!
 
I bought this book some time ago, it has great information on curing and smoking. His recipes are very salty, so be aware of that if you decide to make any of them.

Got one done.  It went rather smooth.  14 inch chainsaw makes nice work of the timbers.

Got one more to make today if I am not too tired after cooking/eating walleye tonight.
 
I had 20 timbers left over to make a 16 x 4 strawberry bed 4 timbers high.  Well, for 15 bucks more I just ordered 15 more timbers and I am going to make it 24 long and place it in line with these other two.  Now with the bed being bigger, I just ordered another 25 strawberry plants to fill it out.  Should have all three done by tomorrow and still beat the dirt arrival.

I'm still trying to decide what to put in mine. Might throw some logs in the bottom like JJJ did with the grave he dug.

Got a triaxle load of black dirt coming, I picked up some garden soil, I have a lot of peat moss, need to get some composted cow manure, going to throw some composted leaves and cow manure in the bottom as well.
 
I will have 4 24 feet long beds to fill, plus a large tire to fill, not to mention 6 other tires to fill for potatoes.

Bricking on the bed looks good. I wouldn't have mortared either, though a footer would've been good if the fish  hadn't been biting.
 
What started out as one 16 by 4 raised bed using 15 timbers has transformed into this log cabin trailer park using 105 timbers

Those raised beds look great. My total garden space is (3) 4x20 raised beds and (1) 4x20 in ground spot. Your crop will be unbelievable this year.
 
 
Sounds like I have more space in the picture than what you have all together.....I don't think I could cope with that.  I'd have pots all over the place and absolutely no yard.

Any chance of the middle of the beds bellowing out or will you be driving supports into the ground ?

I had to make the beds as long as the width of my boat shop.
 
I hid in front of a tree so my shadow wouldn't show in the picture lol.
 
No chance of them bellowing out at all....I fastened them all together and staggered the seams.
 
I left 5 feet between the beds to get the mower through.  Could put beds between them, but then I couldn't walk through lol.

I was thinking the same thing about row covers.  I wonder how much I can extend the season in the fall with one, on average.  I also like the idea of getting them in the dirt sooner in the spring too, but I am really leery of doing that.  Either go too soon, or end up cooking them lol.
 
Came across this on youtube.  I'm just curious about how much sooner can I plant out using these?  How much heat do they hold through the night?  How soon do I need to close them up for the night?  I guess watching them will tell me when to open them up.  Hate to have them get cooked while at work though.
 
But if my plant out date is generally May 20th, could I achieve April 20th or sooner?

Rick (Stickman) does this every year. IIRC, he plants out several weeks if not a month early. Check out his glog last year for details.
 
Got the beds semi leveled and ready for fill.  Will finish leveling them off (level as I see it) as I back fill.

Old posts out, taller posts go in tomorrow for another pickle fence for crop rotation. Looks like I made the right call taking the locust limb off. It didn't have much time left.

Got the pump going again in the boat shop, so I was able to investigate the antifreeze leak in the old 83 truck.  Filled the radiator and the drip was coming from the bottom of the hose that goes to the water pump.  Pulled the hose off and didn't see any issue, but replaced it anyway.  Still leaking in the same spot.  Looks like I crawl under the truck tomorrow to take a look at the water pump next.
 
At least it isn't the freeze plugs.
