fermenting Hot sauce lactic fermentation

How do you make your sauces? Just by cooking the peppers?

All commercial sauces needs to be boiled 180-195 for 10 minutes, BUT my old neighbour from St. John she used to ferment scotch bonnets...man it smelled so good and it was the best tasting sauce i ever tried so far
