Luckydog This is my 1st yr of canning so I really dont know what to til you other than the ones I have done are usually crunchy.Did you use really ripe peppers??Seems the really ripe ones are usually softer to start with.Someone please correct me
if I am offbase or wrong!!

If you're going to store them for any length of time, and it's going to be in an area where they won't get banged around, it's actually better to take the rings off.
It doesn't happen every time, but you can occasionally get a ring that will rust, and bind itself to the lid.
