preservation Interesting article on preserving hot sauce

Very informative article DR.
Its interesting to see a scientific explanation for the preserving/canning/bottling practices I've learned about through the years.
Thanks for posting...this one goes into my personal reference library for future use.

I am trying to develop my brand of hot sauce. Would like to know how to preserve it. It is made with peppers, vinegar, lemon juice, tomato sauce, onions and other spices. The peppers are boil X 15-20 mins, put in the food processor with other ingredients and processed. The sauce is heated to boiling point again and placed in sterilized jars.
