Jerk chicken enchiladas

Was feeling like both enchiladas and jerk chicken tonight, so decided why not combine the 2? I must say, it came out great! Used leftover meat off a rotisserie chicken we bought yesterday.

For anyone interested, this is the recipe I use for the jerk sauce. I've got no idea how authentic it is, but it tastes great!

I had a similar idea tonight,not with chicken though.
 
Jerk sauce on smoked Brisket shreds along with beans (Black and kidney cooked in red enchilada sauce).
Added some homemade chili powder to the red sauce and Judy's red Lava powder to the Jerked  smoked brisket.
 
Did the usual corn tortillas and pepper jack and sharp Chedar thuing.
Baked until bubbly and pigged out with a couple Pacifico brews.
Had a rum and coke for desert,then started work with a happy tummy. :)
 
Going to do chicken legs cooked in green enchilada sauce tomorrow I think.
Maybe add the jerk sauce to cook the beans in.
Tasted good , the jerk Mex. blend.
Going to see what jerked beans tastes with green sauce marinated chicken.

Funny that I just saw this thread, we did smoked pork loin enchiladas last night. They were delicious as yours look.
