Yeah, I so reckon White Lightning would make an AWESOME substitute for apple sauce!

I'll be honest.... at first I couldn't get it out of the bottle and it bothered me..... but as soon as I saw the texture it reminded me of apple sauce and then I tasted it.......... :D

Right now I really can't decide on a favourite, but White Lightning is up there.
 
White Lightning was the hardest one to make, I had to keep tweeking the recipe so that I could get a light colour also...

i had a quick try of them all and can safely say that i like the flavour of all of them. Don't know what others think or your target audience is but I think I would like them all even more if they were a bit hotter, somewhere around the level of inquisition. However you may have made it for the mainstream for a wider audience? If I were to buy a scorpion sauce, knowing that its the hottet pepper I would expect and be prepared for a hotter sauce though. With the Jalapeno one i would naturally expect it to be milder however. You dont always have to make the hottest sauces but perhaps match the heat level to the chilli, if you get what i mean?

My favourite ones so far are not the initial ones I thought I would have liked the most simply by reading the ingredient list.

Bloody Murder really surprised me as I'm not a fan of mandarines, but damn if it hasn't turned out to be one of my favourites! :cool:

I agree, there are a few that I expected to be a bit hotter. In some cases I think they should be left as is regardless of my expectations (Dragon berry, white lightning for example), but some I think should match their pepper as Candice said (for example I found the Serpents sting hotter (or as hot) as Scorpion. I think people will want that one to be a bit hotter).
 
Will have to agree with Candice and Rael too. Definitely expected hotter from some of them. To be honest, I thought most had a very decent heat (enough to burn me but not burn me silly) and would have actually been heaps more disappointed if they were too hot (personally I reckon too hot really ruins the flavour experience for me), but yeah, if I am purchasing a sauce made with Scorps for example, I am expecting a pretty big burn. ;)
 
At first I was making the sauces hotter but most of the people that were trying them for me weren't chilli heads
so I had to tone it done a bit, to suit people that wanted them hot but not overpowering hot,
some of them were saying that the sauces were still a bit hot (I still didn't want to make them any less hot)
so I tried to make them sort of in the middle of chilli head hot and general public hot if you know what I mean????
maybe I'll have to make a mild version and a hotter version
Maybe when labelling, I'll do the super hot versions with a range of the black and white type labels
and the less hotter with the fire labels???
 
Fair enough. I'm used to pretty hot as well so my level of tolerance is a lot higher than most and it is harder for me to detect the heat (the bbq sauce I had on my steak last night, great flavour but I only got a slight hint of spice and that's cos I knew it was in there and was looking for it).
The fire on the labels to me make it look like it should be hotter, maybe you could add something else to the labels to tone it down a little eg. a snake on the Serpent sauce so its not all just fire???
Anyway only my opinion and I'm not your target audience. Just remember if you are going to make 2 versions of the same sauce that is twice as much work and requires 2 sets of labels.
I think if you want something that will sell good, do a little sampler pack like you have for us. People love small cute things and if they can try them all without having to buy a bottle of each they will go for that first. Also with the different colours of sauce it would look nice in a pack lined up together.

According to my tastes/tolerance, I really do think you have done that perfectly!

I just feel though that some people might be disappointed buying a sauce made with a known "world's hottest" (specifically Trinidad Scorpion) that doesn't blow their socks off. Like I said, not every sauce has to burn me silly (and in fact, most of my favourite sauces aren't crazy hot at all), buuut that being said, if I am buying a sauce made with something like Scorps, then pretty much I am anticipating (and probably looking for) an insane burn.

I actually like the idea of having two versions of one sauce too! Has anyone else ever had a favourite sauce and sometimes you think either you would like a hotter or milder version (depending on the case)?
 
I like the two versions thing, while brainstorming ideas of my own (in TextEdit lol) I thought I might do that, but it seems like it could be pain, especially with th amount of sauces you have and their plethora of ingredients. What about giving each sauce a heat rating? (1-10), maybe that would be easier, and effective.
 
Just an idea..... taking into consideration the extra costs and efforts that would be involved in making two versions of each sauce, perhaps "limited edition" extra hot versions from time to time? Get 'em while they're HOT! (pun intended ;))
