Kitchenaid Juicer Hot Sauce

So I was fairly pleased in using the kitchenaid juicer to finish off my fermented chili mashes. Here's what they ended up looking like.  I like how it pushed the pulp out the end.  I'll dry it with my Excalibur and then put it through the coffee grinder to make chili powder.
One of them I forgot what chili(s) were in it. The other is Moruga, Butch-T, 7 pot red and Red Savina.



 
Nice Job of using all the bits!  I've used other "tailings" from other projects in the past.  As much as they can be used, go for it!
 
Bye bye peppers... that pulp is the actual pepper, now you have juice. I would have left it together for a nice mash.
 
That's just my opinion.
 
In a cooked sauce it breaks down and becomes a thick sauce. It's FLAVOR because it's pepper flesh.
 
When other sauce companies strain pulp, they have usually aged for years, so most of the pulp has broken down naturally and is now sauce. But this looks like total separation. The pulp looks very fresh and it looks awful thin in the bottles. Taste?
 
There really is not a lot pulp left behind.  These were fermented for about 6 months. Taste? They taste hot!  No seriously, I don't think I've lost much flavor or pulp.  Though the ? one was thinner than the other, it actually produce less pulp out the other end.  I don't think it had more pulp from those which I fermented a couple of years and passed through a sieve.
 
But I appreciate the thoughts.  I may let others ferment a bit longer this year.
 
Considering some of that is skin and seeds, yeah, it's not much. They probably need a good shake, they look watery on top, but the bottom looks good.
 
Personally, I'm loving the looks of the sauce! I really enjoy thick sauces, but my favs are thin ones that douse easily. Combine the thin aspect with what I'm sure has an amazing fresh flavor , and yours are looking superb. For separation (and mild thickening) I use xanthan gum in mine.


Don't think I'll ever be able to use the juicer for sauces though - the fiancé would kill me the first morning she made a juice with the lingering hit of a scorpion

I bought this just for me.  Wife can only use this for making pepper sauce. :)
