Leftovers Thread!!

Yep.....not sure how this thread will go over, but I'd like to at least see how everyone repurposes their Thanksgiving leftovers.

There are a million ways to use leftovers.....and at the Circle-H.....we want to see them all!!

*As usual......the recipe would be nice, but straight-up food porn isn't bad either!

*Must have a hot pepper component (that kind of goes without saying!)

I'll go first:

Taking the leftover turkey and corn to make Turkey-Corn Chowder!

Boiled and picked the turkey.....then redeposited the bones and remnants in the stock pot for 4-5 hours with onion and celery. Drained the stock and let it cool.

The players:

6-8C Turkey stock, 1lb. pulled turkey, 12-14oz sweet white corn taken from the cob, 1 small onion (diced), 1lb. bacon, 1-1 1/2C heavy cream, 1 pkg cream cheese (melted), 1 C shredded cheddar cheese, 1/4 C sherry, 3-4T ghee (clarified butter), 3-4T flour, jalapeno, and S&P to taste.



BACON!!!!! (diced)

Heat the ghee in your pot.....then add the flour to form a nice blonde roux.



Once your roux looks like this.....add the diced onion and jalapenos. If the roux binds up too much, add a bit more ghee.



Add your turkey stock. bring to a simmer and add your cream cheese. (you may find it easier to just blend the cream cheese and some of the warm stock in a blender....then add to the pot. I used an immersion blender.)



Add your corn. Re-season, and simmer, stirring often, for 20-25 minutes. (it WILL stick to the bottom of the pot if you don't!)



Add your turkey (saving some for garnish) and your heavy cream. Re-season, and just heat the soup through. (No need to boil)

Some leftover jasmine and short grain rice. Some leftover stirfry plus some additional kimchi with juice juice and gochujang = Kimchi-bokkeumbap

The recipe is almost exactly like Maangchi's recipe. I sub in about 2-3 tbs of LKK Premium oyster sauce and soy sauce mixed 50/50 but no water. I fry the leftover rice by itself for a couple minutes and move it to the sides of the pan. Then i fry the other ingredients in the center for a couple minutes. Mix it all together and add the gochujang/juice/soy/oyster sauce mix. Fry for a few more minutes and serve.
 
This is such a simple recipe, and it works great with pulled pork, chicken parm, ground beef (burgers), etc.

Today I used leftover Cajun smoked turkey from Thanksgiving. It's SLIDER time!

Preheat oven to 350* and get your rolls and stuff ready

Lay out the bottom half of the buns in a greased baking dish and top with cheese, then turkey....

Then more cheese.....

Add top halves of the buns and brush with melted garlic butter.....

Light dusting of grated Parmesan.....

Bake for 15 minutes.....

Southwest Turkey Tortilla Soup and Tamales

INGREDIENTS
1 cup chopped onion
1 clove minced garlic
2 cups chicken broth
1 cup vegetable broth
1 cup fire roasted corn
1 can diced fire roasted tomatoes, 14.5-ounce (undrained)
1 teaspoon taco seasoning
1/4 teaspoon ground cumin
1 pound of cooked turkey cubed 
2 tablespoons cornstarch
1/4 cup cold water
1 tablespoon of hot sauce (i used my rocoto sauce/paste)
Tortillas (baked until crispy, then cut into thin strips)
1 Lime
 
Tamales are filled with corn, and red and green Hatch Minnesnowtaheim chiles

Oknomiyaki!
So yesterday we let our otaku insticts go...
We tried to make that stuff, it's like an omelette with eggs, flour, water, milk and cabbage. Now we stayed very heavy on cabbage and it was too roughly cut. Also, we picked the red one to be fancier.
My friend that has been in Japan said that those somewhat resembled the original. For a semi improvised first time we couldn't complain.

Now i woulnd't call the sauce xxxhot, but it was fair for a commercial one. Also quite sweet.
St Bernardus wasn't the best match for that, but life is always better after a St. Bernardus.

More bacon, mango habanero sauce, rochefort and feta cheese.
Rochefort is excellent but expensive with mighty strong taste.

Just feta and sauce. Salty taste of feta was very good with sweetness of sauce.

Ok, ok, ima bit cheating since leftover chili... Usually is better than chili itself... Also that one has been my best chili so far and held great the day afer. But, stil...
