I'm working on a yellow sweet pepper sauce. I have some Lemon Drops, Criolla Sella's and Trinidad Scorpion Yellow SR in it now.

I'm not sure if it is any good jet.

Also I wanna try a Sweet chili sauce with soem Infinity pepper in it.

Yes you are quit right there, it is just a matter of getting it right tasting and tweaking untill happy.

1 Yellow Trinidad Scorpion sauce
2 Infinity sauce

Verry happy with this Yellow Scorp sauce, just need to tweak it a little bit.

Not realy happy about the Infinity sauce, back to the drowing board.

Sauces look "great" they have that "windowpane" appearence as some of us say, nice color, semi-transparent, easy pour kind of sauce, I to am curious on the herbs and other ingredients suspended in the Yellow/7

How long after making it did you try the Inifinity Sauce? If it was right after making it, give it a couple if weeks and try it again. Time has an amazing way of making an ok sauce into something really good.

During making the sauce and one day after with some Vietnames eggrolls. I'll give it a couple of weeks and try again.
