recipe-help Looking for copycat recipe for BWW Blazin' (the one that's cancelled)

That's pretty much it. I know it was primarily ghost pepper based, and am seeing some so called copycat recipes that don't even include ghost. I'd been using it for years in my beef jerky. Pretty sad about it TBH.
 
Is this a bottled sauce you get at a store? Can you post pics of the label?

EDIT: it says 2015, and ghost was added in 2016. But I think this must be what I am calling 2016 Blazin' with ghost.

I did send off one attempt to communicate to the T.Marzetti Company listed at the bottom. That actual manufacturer. No response. That could be followed up on.

I am hung up on the fact that it it uses ghost pepper. I don't think anyone's /really/ copied it yet.

We had done a lot of expirements and Blazin' was the end of our journey, both for flavor and heat. We used 1 teaspoon Blazin' to 1lb beef. It was perfect. I don't know if I will ever get that back.

WELL,

it looks like some details got away from me.

There were 4 Blazin's


1. Original Blazin'

jalapeño puree
habanero puree
chili peppers
lemon juice
Worcestershire
celery
onion garlic

2. 2016 still "Blazin'" - added ghost peppers. It was tagged "Reformulated" on receipts.

3. 2020 "Blazin' Carolina Reaper" - added Reapers

4. 2023 "Blazin' Knockout" - "A wide range of peppers including Devil’s Breath, Carolina Reaper, Scorpion, Ghost, Habanero, Red and Green Jalapenos, Chile de Arbol and Cayenne."

The funny thing was when they added Reapers, it got less hot, so some people say online. I am pretty sure I am after the 2016 Blazin' formulation, but I did use some of the 2020 for sure later without being aware.

IMHO the marketing department had a big say in the changes and kept wanting to up the heat ante at least perception wise. Peak flavor seemed to occur with the 2016 Ghost Blazin'

From personal experience at a Seattle area WingDome challenge....

WingDome had spot on a food network show that swore they did not use extract in their Wing Challenge. ALL of us who tasted it said... there is extract of some kind in that wing sauce. (PUKE! ) literally....

I'd not believe the restaurant to post their recipes or ingredients. But in all fairness, if you asked KFC for their secret blend of 13 herbs and spices, do you think they would respond? I think restaurants are not required to post ingredients except allergens.



If you can get ahold of a commercially packaged and sold bottle of the actual wing sauce, then maybe folks would have a go at re-creating the sauce. If it is just the memory of 'the dinner i had several years ago...' not sure how much help comments here could be.
