Making sauces with dried chilis

Does anyone here make sauces with dried chilis? I'm slowing picking my peppers but there aren't enough at any one time to ferment and they're taking up room in my freezer and I'm thinking of drying them while I wait for the rest of the harvest to come in.
 
I've never done it but I believe I've seen other threads where members have. Shouldn't be too hard, just reconstitute your peppers add your other ingredients and make your sauce.

I've done so many times in the past and it has always worked fine.I prepare it much like I do a pot of chili, combining all the ingredients I want to use then simmer it low and slow. It thickens nicely...and I find it softens or mellows the flavor somewhat.But I also think it affects the heat level rather significantly.
I made some Aji Limon/pineapple/mango sauce last fall, using fresh ground powder and pods I got from Spicy Chicken.I liked the results so much I grew the peppers this season so I could try fermenting an Aji Limon mash.

Here you go DownRiver...

Aji Limon-Pineapple/Mango sauce

2-1/2 TBS Aji Limon pwdr
1/2 tsp Habanero pwdr
1 tsp cumin pwdr
1/8 tsp garam masala pwdr
1/16 tsp curry pwdr

1 TBS brown sugar(or sorghum)
1/4 tsp canning salt (or to taste)

*(1 tsp arrowroot-optional/as needed)

3 limes

20 oz. can pineapple slices-drained & pureed
15 0z jar mango slices- drained & pureed

Combine the fruit juices(pineapple,mango,lime) and slowly bring to a low boil.
Mix in the powders, cover and simmer over low heat for about 10 minutes
Add the pureed fruit,cover, simmer just below boiling point for 45 minutes
*Thicken with arrowroot ΒΌ tsp at a time
(3.6-3.8 pH - room temp)

Note:
I also use the same recipe and substitute mandarin oranges, which is also pretty tasty.
