smoking Matambre

made matambre last night - got it a bit overcooked but it was still pretty good - had company else would have used some hot peppers instead of bells.

start with bacon:

add meat (butterflied a piece of flank steak) - spiced with salt, pepper, oregeno, red wine vinegar:

add kielbasa:

add celery, carrots, romano cheese, bell pepper (usually use some ham also but i forgot it at grocery store and was too lazy to go back)

roll it up in heavy foil and get ready to grill:

off the grill:

ready to eat (a bit overcooked):
