IPA is bomb af. Kegged it today. Finished at 1.010 (7.4ABV). Taste amazing. It's exactly what I've been trying to brew. Gigayeast is definitely a winner. Can't wait for it to carb up. This one is definitely a keeper.

Also kegged the Pilsner. Finished another point lower after layering at 1.013. 6.04% ABV. It taste great too. Clean as hell with a little bit of hop presence. Perfect summer porch beer.

Forced carbing the keg now. Used Citra, Simcoe, Belson, and Amarillo. They taste pretty damn good together to me

Brewed another IPA. Last one was awesome, and this one may be better. Upped the Pilsner this time. Used Wyeast 1318.

That's a sexy looking sample! It looks like the extra pilsner kicked up the hazy straw color.

1318 is very, very nice for whirpool/dry hop forward IPAs.

I don't have any experience with belson, but the other three are a guaranteed trifecta of premium hoppiness.

Going to a Cicerone's Off flavor class this afternoon. I've been wanting to do one for awhile. Only $35 to do it and it'll be at Side Project so I'll get some good beer afterwards too lol.

It will be nice to be able to identify problems in my own beer when they arise.

I've always wanted to do one of those classes. I can tell all of the standard off flavors in beers pretty well, like DMS, diacetyl, and oxidation.

I would like to learn about all of the other, more subtle off flavors

Acetaldehyde, DMS, Diacetyl, Lightstruck, Trans-2-Nonenal, and Infection are the ones this class will cover.

I'm fairly sure I can identify most of them, but it will be nice to have them isolated and know for SURE what they taste like.

Harvested my hops. Just have to dry them out now and then vac seal them. Going to use them to dry hop a pale ale.

Brewed an imp stout and a small stout with the 2nd runnings this past weekend.

Going to put vanilla, cinnamon, and maple syrup in the big boy. French Toast.

Wife wants cinnamon, vanilla, and habanero. Spicy churro lol.
