My newest "test kitchen" sauce is a departure in that I only used yellow peppers. There's mostly Fatalii, followed by Beni Highland and Lemon Aji, with some fruit juice (papaya, mango, peach) mixed in. It's been food milled and is very smooth. While not watery, I still put on "flow reducers" to control the flow. While there's a hint of sweetness, it's pretty darn hot!
