Ready to try and make my first sauce

Ready to try to make my first sauce. I plan to give it a go tomorrow. Looking for any ideas possible. I picked up several items after reading about various fruit/habaneros sauce recipes on this website. I'm excited to get started. The ingredients I have available are as follows:
16 Orange Habaneros
1 lb Fresh Strawberries
2 Mangos
Fresh Pineapple
Mango Nectar
Peach Nectar
Lime Juice
Honey
Carrots
Apple Cider Vinegar
Cabernet Wine Vinegar

Parsnips will not effect the color much being white and have a peppery tinge to them or carrots, either would be my choice. I would double the lemon juice for more pH control
 
Decided to go an alternate route. Mixed the new sauce with basic barbecue sauce and mopped it on baked chicken and then used it as a dipping sauce while eating. This is kind of cheating, but it worked for at least one meal and actually was pretty good. Now I need to get creative and figure out how to utilize the remainder of the sauce. I have about 32 oz left. Thanks for all the help.
